This drink evokes the layered complexity of the Southwest. The peach, brought by Spanish missionaries to the continent was traded to indigenous tribes in the Southwest, who bred it to survive in the high desert. Combined with Juniper whose twisted branches thrive where other wither away. Uniting the drink is agave, pollinated by bats that migrate northward from central mexico pollinating the desert by moonlight. Together these ingredients form a memory of the southwest, one shaped by migration, evolution, and memory.
